I added the vanilla to my recipe because it adds such flavour and natural sweetness. Such a delicious reward for so little in the way of ingredients and effort. Nothing to fear here, shortbread biscuits are simplicity personified. Once you’ve tasted these Shortbread biscuits, I think you’ll agree. I tend to double this recipe this way, you get to gift some to friends, just as Ted Lasso does, and you get to eat a whole batch yourself. Other than that, these are simple biscuits, but totally addictive and it’s thanks to Ted, and Food 52 for the inspiration. A mixer of some nature helps their greatness as the butter needs to be beaten to add lightness and this may test your biceps if made by hand. These Ted Lasso inspired shortbreads are sweetened with icing sugar instead of my usual caster, they have a hint of vanilla and are super easy to make. Make them as gift for someone you love, serve them with winter poached fruits and a lot of cream or nibble on their golden softness with an afternoon cup of tea. Shortbread Biscuits are such a versatile affair. So much so, I found the recipe and made my own. The show’s football based, which I love, it’s set in Richmond, about ten minutes from us, a place I love and Ted makes the his boss shortbread biscuits everyday, which I really love. It’s a gentle, super funny show on Apple TV *thanks to a new phone I got a free 3 months subscription* which we have binge watched 2 seasons of. We are a bit late to the Ted Lasso party and I’m guessing, if you don’t know what I’m talking about, you are too.
